Are You There Mother Nature? It’s Me, Stephanie….and Garlicky Lemon Zucchini Topped with Feta

Well I hope some of you had a much warmer, much sunnier Memorial Day weekend than we’ve been having.

Seriously, it’s just cruel- we had eagerly looked forward to a weekend of warm runs, ice cream and hikes. Instead, we’ve been huddled inside working while it is cold and rainy outside. In all fairness, the sun DID make a small appearance today but it was still too damn cold to call this the unofficial start to summer.

Despite the rain, we put our big kid pants on and went for a run yesterday. I mean, seriously, there is NOTHING better than raining with the cold wind and rain pelting you in the face right? What, you don’t agree? Crazy.

Tonight, in an effort to pretend it is summery outside, I threw together a very quick summery side dish I thought was worth sharing. I bet this would be delicious on the grill but alas, mother nature laughed and said no. I hear tomorrow it may be warmer- fingers and toes crossed?! Just in case, I’ve given up on grilling. I currently have some spicy pulled pork cooking in my slow cooker, to be topped in a cilantro avocado dressing- recipe to come a bit later this week (hoping to post a bit more regularly).

What’s Inside: Garlicky Lemon Zucchini Topped with Feta
Servings: 2 • Serving Size: 1 half • Calories Per Serving: 90

Ingredients

  • 1 zucchini, sliced in half
  • 3 cloves of garlic, crushed
  • 2 tsp of olive oil
  • 3 tbsp of lemon juice
  • 2 tbsp of feta
  • salt and pepper

Directions

Rub zucchini with 1 tsp of olive oil and grill or broil inside down for about 3 minutes. Flip and broil another 3 minutes, until inside of zucchini becomes tender.

In the meantime, in a small bowl mix together garlic, remaining oil, lemon juice, salt and pepper.

Pour lemon mixture over inside sides of zucchini. Broil another 2-3 minutes, until garlic and zucchini begin to brown. Top with feta and cook for another minute. Serve.
