Shame Game.. and Cilantro and Lime Tilapia Tacos with Red Cabbage Slaw and Adobo Yogurt Dressing

Yikes, this summer is flying by and I feel like it is leaving me behind a bit. I have to admit, it has been a really hard transition coming back from vacation. Only two weeks away should not have thrown me for quite so big a loop. And yet it has.

Running, oh my old friend running. I admit, I have been slacking here. I already wake up at 5:30 to go to work so it is hard getting up even earlier to hit the pavement! Wahh wahh wahh. Quit whining right? I am sick of my own whining so I am making a change. I am announcing it here because let’s face it, shame and accountability work wonders on me. Now I will feel obliged to get my butt out of bed earlier because I will feel like someone is aware that I should be- even if no one really is.

And the funny thing is, I miss it. I NEED to get out there. But seriously, 4:30 is UNGODLY.

One thing that would help would be to move closer to work- and we are working on it. We spent all weekend renovating our half bath- which mind you was new 5 years ago. Who does that?! Oh ya, Team North. So far, we think that it is actually looking pretty great. Here is a preview.

I stupidly forgot to take a full before picture so I need to search our archives and find one. Picture it instead- same sink and counter combo, but with a 4 inch granite lip/backsplash thing. The paint was a peanut butter color and we had a silver framed mirror.

Anyways, enough of the DIY. Sadly, with all the DIY, I had NO TIME TO COOK this weekend. Well, I did make a caprese salad on Saturday. There is always time for tomato and basil in the summer.

Despite my lack of kitchen time, I do have a fun and yummy recipe to share. I made this one LAST weekend but since I am so on the ball lately (read the sarcasm?), I am only getting around to posting it now. It is SUPER fast and easy to make- I swear. Enjoy!

What’s Inside: Cumin and Lime Tilapia Tacos with Red Cabbage Slaw and Adobo Dressing
Servings: 6 • Serving Size: 1 taco • Calories Per Serving:110****

**** calories were calculated without corn tortillas as they vary by brand. The corn tortillas I used were 50 cals a tortilla.****

Red Cabbage Slaw

Ingredients

  • 1 1/2 cups red cabbage, shredded
  • 1/4 cup lime juice
  • 1/2 medium red onion, chopped finely
  • 1/4 cup cilantro, finely chopped
  • 1 small tomato, diced finely, seeded and drained

Directions

Combine all ingredients in a bowl. Chill while preparing fish.

Adobo Yogurt Dressing
Ingredients

  • 1/3 cup plain Chobani yogurt
  • 1-2 chipotle chili in adobo sauce with a tsp of sauce**

Directions

**I use the canned chipotles in adobo sauce for this recipe. I do not used canned items like this often, but I find it works well for this. However, if you prefer, you can certainly sub in a roasted jalapeno pepper, mashed or diced.

This one couldn’t be easier- combine the yogurt and chipotle and mix, mix, mix.

Cumin and Lime Tilapia

Ingredients

  • 3/4 lb fresh Tilapia
  • 1 lime, squeezed or 1/4 cup lime juice from a bottle
  • 1/4 cup chopped cilantro
  • 2 tsp extra virgin olive oil
  • 2 cloves garlic, crushed
  • 1/2 tsp chili powder
  • 2 tsp cumin
  • 1/4 tsp coriander
  • salt and pepper
  • 6 small corn tortillas
  • 1/4 whole avocado, sliced

Directions

In a large bowl, coat tilapia with lime juice and oil. Toss with cilantro, garlic and spices. Allow to marinate for at least 15 minutes covered in the fridge.

Once marinated, grill for about 3-4 minutes per side, until cooked through. Make sure you spray your grill with oil or a grill spray to avoid sticking. If you prefer, you could grill it in a foil wrap.

Slice tilapia into small pieces and serve in a warm corn tortilla. Top with 1/4 cup of the cabbage slaw, 1 tbsp of the adobo yogurt and a couple slices of avocado.

  1. NO shame…accountability, yes, shame, no ;-) Cut yourself a little slack, you have a LOT on your plate right now, but I know you will get back into it!! OWN it :) (I need this too, not shaming myself, just getting back to the straight and narrow after our trip!) :)
